Our HsjGourmet Gold Edition Author Shoulder, Shoulder is a completely handmade Shoulder Shoulder, with a prolonged natural cure of 24 to 30 months. Our special selection of “Edición Oro” Author Shoulders come from pigs fed in a natural and balanced way. The animals are raised in freedom in the extensive meadows of Guijuelo, Salamanca. And they are made and cured exactly the same as our grandparents and rancher ancestors did.
These shoulders are pieces outside the norm (R.D.4/2014 of the Ibérico) since we have decided so, in this way we can offer an excellent product at an affordable price for all budgets.

ORGANOLEPTIC CHARACTERISTICS:
Smell: intense, persistent aroma of slow and careful curing in natural dryers. Colour: Lean, bright and intense pinkish colour, with infiltrated fat very streaked in the muscle due to its purity of breed.
Taste: Intense aftertaste characteristic of the natural resources of the meadow.
Texture: Homogeneous, juicy with fluidity on the palate.
Healing: Healing that goes from 2 to 3 years in century-old natural cellars.

CONDITIONS OF CONSERVATION:
Store in a dry and cool place. Avoid excess moisture. Natural environment. You don't need cold.
CHOOSE YOUR PREPARATION:
The entire piece: It is sent wrapped in anti-grease paper and with a black cotton cover and red mesh. The shipment is made in a special box for hams.

SERVING RECOMMENDATION:
Serve in thin slices and at room temperature (preferably between 20 – 25 ºC). If the ham is sliced, it does not need to be stored in the fridge, it will only have to be stored in a cool, dry place. You'll know the slices are done when they naturally separate from each other.
