Our HsjGourmet Silver Edition Signature Ham is a Ham made in a completely traditional way, with a prolonged natural curing of 24 to 30 months. In this way we get a ham with a deep and intense flavor. It is in the meadows of Extremadura where the animals from which these private collection HSJ family matanza hams come have been raised, with a production of pieces that today is very limited.

And they are made and cured exactly the same as our grandparents and rancher ancestors did. These hams are pieces outside the norm (R.D.4/2014 of the Iberian).

The Author Ham of our Family Slaughter.
After five years of research in search of the best raw material in Spain, HsjGourmet together with a family business located in Guijuelo, Salamanca with several generations of livestock activity in the breeding and processing of the Iberian pig, we have created this excellent line of hams outside Standard "Silver Edition".
Based on tradition, but incorporating innovations in all production processes, we have achieved our dream, creating a line of products such as ham and sausages made in an artisanal way, so that you and your family can enjoy it at your direct home. from the factory, without any intermediaries.
In order to make this dream come true, HsjGourmet set a series of requirements and commitments:
•The first of our commitments was animal welfare as well as that of the environment.
•The second commitment was to create a variety of Iberian pig products completely handmade in its preparation and following the recipes of our ancestors.
