This cheese is made with raw cow's milk and goes through a maturation process that ranges between 60 and 180 days in natural caves located in the mountains. The unique conditions of these caves, with a relative humidity of 90% and a temperature between 8º and 12º C, facilitate the development of molds of the penicillium type, responsible for the characteristic blue-green veins.

Characteristics of Cabrales Cheese

• Texture: Creamy and unctuous, melting on the palate.

• Flavor: Intense and persistent, with notes of nuts, cookies and spices, and a spicy touch that intensifies with maturation.

• Appearance: Natural, soft bark, orange-brown to grayish in color, with blue-green veins that darken over time.
