Features of the 50-75% Iberian Cebo de Campo Shoulder Ham

Origin and Curing
Our Iberian Cebo de Campo Shoulder Ham, hand-selected by HsjGourmet, is produced in Guijuelo and cured in natural drying sheds over 800 meters above sea level, benefiting from the fresh air of the Salmantine mountains. The spring and gradual temperature rise allow the acorn fat to blend with the lean meat, enhancing the characteristic flavor and texture of this Iberian cebo de campo shoulder ham. The curing process lasts between 24 and 36 months in century-old cellars, where natural molds and yeasts further enrich its quality.

Organoleptic Properties

  • Aroma: Intense, resulting from a slow curing process.

  • Color: Rosy with marbled fat, thanks to its Iberian purity.

  • Flavor: Persistent, with notes of acorns and dehesa herbs.

SERVING RECOMMENDATION
