Fabada Asturiana Recipe Spain
Traditional Asturian Fabada- Recipe of the Best Chef of Asturias
Ingredients for 4 people:
∙ 500 g of beans (Fabes Asturianas).
∙ 200 g of compango (Asturian chorizo, Asturian blood sausage, pork shoulder, smoked bacon).
∙ 1 large onion.
∙ 2 garlic cloves.
∙ 1 Bay Leaf.
∙ 1 teaspoon of sweet paprika.
∙ Extra virgin olive oil.
∙ Water
∙ Salt to taste.
Step by Step:
Step 1:Preparation of the Ingredients:
Wash the beans under cold water and leave them to soak the night before (12 hours). This will help soften them and reduce cooking time.
Rinse and cut the compango into medium pieces. Peel and finely chop the onion and garlic cloves.
Step 2:Cooking the Beans
Drain the beans from the soak and place them in a large clay pot. Cover with cold water and cook over high heat. When it starts to boil, reduce the heat to medium-low and cook for about an hour and a half (1:30), or until the beans are tender but not undone. Add hot water as needed!
Step 3: Sautéed Onion and Garlic
In a separate skillet, heat a few tablespoons of extra virgin olive oil over medium heat. Add the onion and minced garlic. Sauté them until golden and fragrant.
Step 4: Incorporation of Paprika and Compango
Add the teaspoon of sweet paprika to the sauce and stir quickly to avoid burning. Then, add the Asturian compango, the pork shoulder and the smoked bacon and lightly brown it.

Transfer the sofrito and the compango to the pot with the cooked beans. Let all the flavors meld by cooking over low heat for about 15-20 minutes. Add salt to taste.
